Machalot's post in F-16 magnetic compass and INS heading bugged was marked as the answer
I seem to have resolved this issue by deleting all the contents of Saved Games\DCS.openbeta\Data\MagVar\TabularData.
It contains a bunch of .bin files that were apparently corrupted and causing bad compass readings. No idea how that happened though.
