In DCS output is limited to spring stop. Passing the spring stop requires holding the [L] key. You can read more about it in my simpit thread. You can also find physical data on controls movement there (attached spreadsheet).

DCS cameras, views and video recording has appropriate guides in the recent posts, including the very latest cinematic camera feature. Try going through those tutorials first. There should be no need for re-mapping of defaults or per-aircraft mapping as far as I know.
