I tried a FULL repair (not only modified files) and deleted the temp files. This solved it.

I think this is already in the "Known Issues" part of the update and is scheduled for hotfix, if I understand it right.

On my latest flights it worked most of the time!
You have to be in trim to get it to work... Actually now I think this is modelled close to reality as our Eagle is not the youngest and Autopilots needed more babysitting back then.

I found out that this is a bug! The mission I tried loaded per default 4 fueltanks... after rearming in mission it seems the weight is not changed internaly.

Nevermind! I thought the "Gunner Panel" in the settings is the right panel, but it is the "Crew Status" - Crew status shows up.
Altough I would like to know what the Gunner Panel is - just curious.
