I think you might want to reduce the severity of maneuvers considering its a simplification and not an actual existent feature of the real copter.

If you can set a tanker close by and takeoff with less fuel that would be a probable solution. You can control AI's fuel. You can also set more headwinds in mission editor.

I am trying to understand whether saving category button saves the mapped controller column commands, the drop down category (axis, systems, simplifications, general, cheat, etc..), or everything on the controls page for all controllers for the particular module. I agree. F-5E is the best indication that stick is for speed while throttles are AoA, while being approximately trimmed on the correct 3 o'clock AoA. Its easily visible if you power up, the sink rate is reduced as evidenced by the HUD camera moving up and likewise when powered down while maintaining speed with stick.

to alleviate this problem I learned to see the To and extrapolate the From in every mission. Also, when speaking magnetic versus true course, are those winds true or magnetic? Do I need to subtract or add 6?
