Coolant drops under 60 C and engine dies

I believe my issue is that my engine is overcooled, as the coolant temp in flights goes below 60C.

 

This is 2650 rpm and less than psi +8 - gradual climb, it's happen to me several times and I'm not quite sure what I am doing wrong ?
