Hard to say. If you can live with waiting for Early Access modules features and fixes, and bug fixes in general, then stick with stable.

If you cant, but also willing to run the risk that a deployed update brakes some stuff, then run with Open Beta.

You don't need 2 game installs... You can change to the DCS version you want to have. In general it makes more sense to run the beta, as you get more access to stuff and if you dislike it so much you can re-roll your game back
