How to manually tune/change frequencies?

I've looked at the quick start manual and tried to work my way through the EUFD and the COM format on the MPD, all with no success.

How can we change the VHF, UHF and HF frequencies when the presets don't include the desired freq?

Last night I flew the Instant Action mission "Tbilisi Guard" and it says to tune to 251 MHz on the UHF. That's not available as a preset, and I couldn't for the life of me figure out how to change it.

Grateful for any pointers.

Click the COM button on the bottom right of one of the MPDs.  Then click the Manual button on the bottom row.  You can then select the channel you want to manually update by clicking it and then entering the value into the keypad on the left side of the cockpit.  Press Enter and you should see it updated on the MPD

I swear I checked that page half a dozen times and the "MAN" button just wasn't there. Well, now it is.
