The manual points this switch out several times, but could someone tell me what it does? It seems all the switches around it get explanations but this one I can't seem to find.

It uncouples the stick from the autopilot / pre-servo control and switches to the back up direct control. used in case of partial hydraulics failure or autopilot system failure I believe.

I was just asking myself the same question and consulted the manual which states on page 33:

As mentioned previously, in case of the pressure of circuit one falling beyond a certain threshold, part of the circuit is isolated and an electro-pump is activated.“

This confuses me. Which parts of the system does the automatic system „Ancillary Shutoff Valve“ isolate and which ones does the Stick Uncouple Switch then isolate on top?

When I understand that diagram on the same page correctly the Uncouple Switch only isolates the autopilot servos and the Ancillary Shutoff Valve isolates all the ancillary systems
