Regarding the audio, DCS has an option for that called "Hear like in helmet" or sth like that, which does what you want. In general, we do not recommend that setting though as you are missing out on a lot of extra audio-feedback that compensated stuff that you would feel IRL otherwise. So while "hear like in helmet" is in terms of audio more realistic, it is hard to argue that the experience as a whole becomes more realistic that way. My wording was off, I dont mean noise canceling to block out sounds, more like litlle damped sounds when you put on the helmet. I really like these sounds, so I will not miss it. Damping the sound only a lil bit would fit a immersion better when you put on the helmet.
