As for a video that shows all of them, I have never seen video quite like that. What each button does depends on what your Sensor of Interest (SOI) is. For an explanation of SOI see pages 398-402 of the Flight manual. EDIT: The thrustmaster manual that you found is only useful if you have a TM Warthog Stick/Throttle.
