DCoffey's post in VR crashes out was marked as the answer
VDS crashes for me when I use the AV1 codec (which is for the quest 3) but it runs without issue when I use the HEVC 10bit codec.

I was just about to suggest using some program to check your cpu's and see what they are doing. I have a I7-14700k, RTX4070ti and using virtual desktop with godlike mode and DCS is butter smooth for me in VR. I use process lasso for DCS set to only P-cores and FS set to use all, seems to work better when it uses the E-cores but DCS starts stuttering if I have them enabled.

Happy to announce I found my problem, for some reason the onboard GPU was causing the crashes. Never had a problem prior to this update, but it must have something to do with picking a video card.
I disabled the onboard card via the device manager and DCS works as expected.
Don't know if it will help anyone else but it resolved my problem. Thanks all that helped!
