Yup, it doesn't make much sense but indeed the setting that was messing up my elevator trim (and nothing else) was FF (guess it was on by default on a new PC).
When I went to Settings > Misc. and unticked the Force Feedback checkbox the problem is was gone.

Go to Settings > Special > UH-1H and untick Autopilot Availability checkbox.
