Yes while I do understand that; like I said I am experience in various flight simulators other than this one, as I am a pilot and sims are my hobby of sorts. My question was how do I configure the mouse to do the flying as I asked because I do not have a joystick currently and before I buy one I need to make sure demo proves the game is applicable enough to swing my money on. If anyone has an answer to this question I would highly appreciate it.

I know how to get to the menu but as me being a newbie to Lock On (pro on others) who unfortunately does not have a joystick currently, I am trying to figure out what axis or controls do I add so I can pitch, yaw, and roll the plane with the mouse. And maybe fire with the right and left buttons, throttle with the wheel. I have the demo.
