Is there any way to use a virtual kneeboard in the sim? It would be cool to use for checklists and such.

I prefer to use a real kneeboard rather than a virtual one. I think it's way better than a virtual one and fairly easy to implement :P

That said, I think it would be very nice to be able to print out missing briefings, maps and recon photos.

As for a virtual kneeboard, if you have a second monitor, you could have your checklists and maps open there. I prefer to use my second monitor for Shkval and ABRIS AMMS.

A simple alternative to a kneeboard (it can be difficult depending on the hardware configuration), would be a small pad with a clip. That combined with stand to hold paper pages (can be found in any office supply stores) can be very useful. I use a similar setup for approach and route plates. It's my replacement for not being able to clip stuff on a yoke.
