As far as I know, all user created files are stored in the Game Installation directory itself.

Data from mission isnt saved. Tracks are, in the game's \temp folder. Or in the \Mission\Multiplayer if you hosted a MP game.

New Mission are saved where you choose, if you mean missions saved from the mission editor.

Other than that, the different config is scattered throughout different folders and files.

Please be more specific if you look for something in particular. ;)
