Trk means "track". It's a recording of events in a given simulator session. So you can say it's a video recording, except it does not record what is displayed on your screen - it records the actions made (your stick inputs, AI decisions and everything else). This means that when played through the simulator you can switch to other views, or test on it (since the host machine will perform all the relevant calculations, letting you compare between computers and so on).

After a single-player mission, you'll find a "save track" button in the debrief screen.
