Looks like you can simply supply it with 5V or 3V, hook up the output pin to an ADC input and you are good to go.

 

A proper datasheet that explains the internal operation would be nice though. I am a bit fuzzy on the purpose of the F_R pin and why they specify a resolution (10-bit) for an analog device. There is probably a microcontroller on the inside that does some data munging before using a 10-bit DAC to generate the output signal, but that's only a guess.

 

There is also this model which seems to be the same one but with a digital interface. That one also supports 12-bit resolution.

 

BTW, where did you find a price of $18? All I found was "$1 - 80 a piece".
