I'm building a dynamic mission generator where I'm trying to spawn a new helicopter unit with a specific payload. Can someone help me with a code snippet on how to define payload/pylons within a unit table?

It is the same format that the mission file uses to define payloads. So make a new mission with the helicopter and payload you want and save it. Open the miz file up via winzip or 7zip, then load the mission file into notepad++ and have look for the helicopter.

 

I did a quick search on my pc but I don't think I have any examples on hand at the moment.

The right man in the wrong place makes all the difference in the world.
