Hello, I have several DCS Aircraft and a Warthog Hotas. What I gather so far is that probably the safest and actually best profiles are the ones I would make from the game's modules drop down menu in Options and just add what i would like.

There isn't much in downloading Profiles already done (some are very old) from the download section of the website and I agree I don't use TARGET GUI.

Is this the safest way to make reliable profiles that won't go bonkers or are there better choices?

I always use the in game menu. You may get the odd key bind that goes astray with an update but its rare. Obviously early access modules are more susceptible, however even they seem to very rarely require modification.
