This is as much a question as it is as wish I guess. On some areas of the world GPS signal is not as reliable or fails integrity monitoring. I have personally experienced this in the eastern Mediterranean.

Does DCS simulate GPS in any way that can be made unavailable to the clients like a global setting?

I can see how this can really spice things up a bit now that we have several full fidelity modules that simulate avionics to a good extend and lots of weapons coming that rely on GPS for guidance.

Ka-50 module (pre DCSW) famously calculated GLONASS coverage. It was even possible to disable some or all of the satellites in the mission for degraded or no GNSS availability.

 

How that is the case now with Ka-50 or other modules I don't know. Perhaps looking at mission file in text editor will show satellite data?
