I have been trying to get into DCS and indeed, enjoyed the free module month.

However I have an issue. in my first flight of any aircraft, I map my joystick keys to items such as flaps. gear, brakes etc etc. all work fine while fling

however, if I restart DCS and fly that aircraft again, non of the controller buttons work. the axis still work and I can control flight, but none of the assigned keys work. I check the settings and they are still set, and even re-setting them does no work, So bascially I can only fly an aircraft in the game one with HOTAS, then never again

Worth checking if you perhaps alter between "game" and "sim" controls. They are different. But if seems not the issue because you had it working.

I had yesterday such a problem that middle of the flight buttons stopped working after using them. They didn't anymore react to anything until I opened settings and did test there some of them and then go back to flight. After some time it happened again. This was so before todays OB update.
