In your case it is probably because the right monitor is sitting lower than the other two. Even if it is off by ONE pixel, then there is a line of pixels at the bottom of the monitor that DCS is not covering and so the taskbar shows.

 

Tried it by both setting the right monitor way lower than the other two as well as increasing the res in DCS to 2170. 

Managed a workaround by ticking auto hide task bar in the taskbar settings but that's not a great solution as I like to have the taskbar on my non gaming monitors.

 

When I launch MSFS the taskbars are hidden. Strange

Maybe I didn't make it clear.

The problem IS that the right monitor is lower. Monitor 2 needs to be perfectly level with monitors 1 and 3.

Sometimes you can move monitor 2 around but it will not snap in line with monitor 1 and 3. If that is the case, you can try "snapping" monitor 3 to 2, then 1 to 3.
