Making a button into an encoder, possible??

Hi,

I was wondering if I can make one of the RGB buttons into an encoder knob, so with first press and hold it goes clockwise, and with a second press  and hold it goes counter-clockwise...?

 

Because I need more knobs in my cockpit, even with Control Panels and Throttle
