Is it possible to toggle MISSION OPTIONS in scripting mid-mission?

Scenario:

I'd like to have some of my blue players engage in a dogfight practice area whilst waiting for the surprise mission to start. 

I'd like to be able to turn on unlimited weapons and immortality so I can have them actually shooting each other, but then when the 'real' mission kicks off, turn off unlimited weapons and immortality.

I can see how to toggle 'Immortal' in the PERFORM COMMAND > ACTION menu... but I was hoping to be able to toggle on/off the unlimited ammo.

Is this possible?
