I noticed that when starting cold, there is no issues with pitch and trim after taking off from the runway. From the hot start and takeoff, jet goes into high positive pitch, as if it is not trimmed correctly.

I noticed this high nose up tendency from hot starts too. Not having done a cold start as yet then I don't know if that is normal take-off trim (there is a mapping to set t/o trim I think) or a bug and a genuinely abnormal trim setting is being applied in a hot start scenario.  To be honest once I knew it was set weird I just got used to trimming it back out after takeoff.

You are not using T/O trim in your cold starts then.  Hot starts has it input at default.  You have to manually null trim after takeoff.  This is accurate to the real aircraft.  No bug.

I have been using T/O trim in my cold starts, why I was surprised by the smooth takeoff.

Trim stays full deflection nose up until nulled out manually.

The takeoff (T/O) trim button, on the CAS control panel, when pressed, drives the stick and rudder pedals to the takeoff position which, in turn, drives the aileron, rudder and stabilator actuators to the takeoff position. Are these actions animated?

Yes. Stabs/stick will visually move to correct position
