And as others mentioned, idle sounds as heard on a video will vary considerably depending on what's recording it, camera distance, etc. Jet engines are so darn loud that they sound completely different up close than far away, because when close you're either wearing hearing protection (which changes the sound) or the noise is loud enough that it's just painful white noise. The same applies to microphones, which is why you were able to find videos that seemingly sound different than what you find ingame.

Just wanted to let everyone know I'm currently in the middle of a complete re-do of all engine sounds (internal and external for A and B, using some new tricks learned from the F-4 and brand new/improved audio samples as well as many completely new layered sounds like intake howls, etc.

End goal is to get as close as possible to this:

Sound update part 1 has dropped. It appears the build that ED pushed out doesn't have the latest audio changes. We'll get those in next time.
