Could you offer some examples of things GTFO does not do that would be 4/5 or 5/5 realism please? 

When are campaign missions flown, i.e., days of the week or Sat/Sun & what time zone plz?

Campaign missions are flown on weekends to maximize the timings with our global membership. Training and ad hoc flying happens throughout the week. 

And for the realism, short answer is we keep the stuff that matters -- how to be effective in the airframe, how to coordinate and communicate with your fellow pilots -- and ditch everything else that doesn't.
