How to switch to sim mode?

This is the last of my issues, I cant figure out how to enter commands into the game to switch it to sim mode

Also whenever I try to make changes to gameplay difficulty options they don't save under the game presets, for instance if i take off game flight mode / avionics and hit Ok, nothing changes.

whereas changes made to Simulation do save.

You just need to go to options and select SIM mode in there.
