The FTITs and RPMs max out at specific values, in particular the actual RPM value also depends on altitude, weather, etc.

 

You check afterburner stage by looking at the nozzle gauges once you go past the MIL detent.

Nozzle position, fuel flow and noise is the only way to tell AB is lit on several aircraft in RL ( AFAIK F-16, 15, 18, etc)
