How do you remove the pilot so you can see all of the controls?

I know I saw it mentioned in a video, but I can't recall which one.

 

How do you remove the pilot model for the seat you are occupying so your view isn't obscured by the body of the pilot in the seat?

 

Also. I have been trying to use the LAlt+Y and LCtrl+Y to set the text box that I have noticed in some videos. I cannot get these to come up. Is it a settings thing to disable them?

Right-Shift+P for the pilot IIRC.
