Question on Generate Fast Mission

I have not messed around much with this feature in the past, but thought I would try and generate a quick mission in my Spit over Normandy.

Which I did - however, I would prefer flying against period specific aircraft and not supersonic jets over Normandy.

 

Any way to work with this in fast mission , or is that something I need to learn to do in the Mission Editor instead?
