Is it possible to make my AI do touch and gos?

Negative.

 

You can kind of do it with helicopters, using the "land" feature in advanced way point actions.

The only way you could mimic touch and go's with a fixed wing is to have the landing aircraft deactivate after it slows to a certain speed on the runway, and then spawn an exact copy of it from "takeoff from runway" from the same airport.
