Someone in Reddit told me that this is snot possible in the WWII warbirds in DCS 

Hopefully we will be able to hide the stick in the next releases...

Not possible, possibly not coming (and tbh not needed)

if you fly VR, you need to see the stick indeed. But if not on VR it is weird to see the stick in real and also on the screen.
