I've noticed that after T/O the canopy gets a tad hazy, are there vent ducts or should I be using the cockpit heater to clear the canopy?

Neither, as it is not simulated.

It's more likely that you just positioned yourself in such a way that the canopy has a weird effect on it because of the sun. If you change your heading/attitude, that effect should disappear.
