Upgrading my rig to better run VR, however I consistently run into issues with powering my hotas and other peripherals.

The new mobo is an MSI MAG x570 tomahawk and I may require more USB 3 ports to power VR, HOTAS and more. Is there a way to expand more ports and if so how, I know PCIE expansion cards are a thing however I'm hesitent due to the devices being high power draw. which leads me on to USB hubs. can powered hubs provide enough power and data transfer while also being stable and reliable? as i am aware that sometimes peripherals do not play nice on hubs.

currently looking at the star tech hubs. thanks.

All of my sim peripherals are plugged into a 7-port USB3 hub with external power, which is then plugged into the exact same motherboard you have.  My headset's USB3 is plugged into a separate USB card in one of the PCI-Ex1 slots.

All 7 ports on the hub are in use and I have no stability issues.  Two sets of flight controls, rudder pedals, PointCTRL, a second keyboard, and a Jetseat.  As long as the hub you choose has supplementary external power, you should be fine.
