How to get collective and throttle axes from going to 0 at mid point?

Not sure what you mean. But all axis except those that are on sticks with x/Y should be set to sliders. And toe brakes often need to be inverted too.

so my next question would be, if the power levers are set to full at the start of a scenario, do i need to bind the twist throttle on the collective?

The Hind?
No, the "corrective" levers should be in the middle position and the twist throttle to full.
There are other threads explaining this. They are actually not power levers, and will prevent the throttle from going to max.
Sorry, I can't explain this better, as I haven't paid too much attention to this, but I now the correct use.
