Which AA mode are you using?  I don't use VR but I also get heavy shimmering in the Mirage F1 cockpit.  Especially, the EE.  But I'm using MSAA and I think that mode of anti-aliasing stopped working a few patches back.  I can tell because there are more jagged lines inside and outside the cockpit no matter which module.  The Mirage F1 just seems to suffer the worst from it.  Before the patch in question, the F1 cockpit looked fine for the most part ... at least in 2D.

I'm just using the standard Quest 2 AA setting.

I have noticed this shimmering is only an issue if you have sharpening enabled.

I am not saying there is nothing wrong with the texture map. I have no proof of that either way, but I think sharpening is the culprit.

I have found the DCS native sharpen fx causes a lot of visual anomalies. Especially if used without some form of up-scaling. That said, the F1 cockpit aliasing is visible even using ReShade sharpening shaders. I think it just the result of fine noise/sand type texture being over sharpened.

Good point @Daemoc. I know I have 35% sharpening in OpenXR config. I'll check next weekend if removing this sharpening makes it better. However, I'll probably put it back for the other planes, because else their cockpit texts are not that sharp.
