What features should I have on when running a server?

when running my server what windows defender features should be off/on? I know to turn Norton 360 off and I have done that

You just need to add TCP and UDP port that you decide to run DCS Server on it. Add it as a PORT rule. Default is 10308

So go in Windows Defender Firewall with Advanced Security =>  Inbound rules => New Rule
