In your FC2 install directory you should have a Docs folder, the manual is in there in PDF format

wondering if there is an arcade mode

IMHO all of FC2 is an "arcade mode".

FC2 has similar simplified game modes as Black Shark does; and the simulation mode isn't anywhere near as detailed. No 3D clickable cockpit for a start; much much fewer controls. For example, starting the engines is accomplished with one keypress for each engine. No APU to start first, and you don't even have to wait for one of the engines to spool up before starting the other.

So in that respect, FC2 is much more accessible. The 'quick start' you're referring to is probably the 'instant action' missions, which is the same as Black Shark: just a canned mission that starts you in the air for immediate action. There's a different 'instant action' mission for each aircraft.

It's definitely a good choice if he's into light flight sims.

FC2 doesn't have a demo. You could check out the LOMAC demo as it's a pretty similar game; basically LOMAC plus its expansion ported into the same engine used for Black Shark, but the amount of detail (or lack thereof) is pretty much retained.
