Because missiles are made that way they are not intended to hit the target, they have fuse, like laser and proximity, these fuse activates the warhead when it senses an object (in this case jet) within its range and then fragments, shrapnel and shock-wave does all the work of destroying the plane. So basically a hit on jet is not necessary to destroy it.

Some missiles are made that way, and most of those are SAMs. Pretty much everything else is hit-to-kill and the fuze is a backup which may well be flat out required against a maneuvering target - but hit to kill is still the preferred mechanism (as opposed to some SAMs like NIKE, which deliberately fragment in your flightpath). Just a technicality.

And, to add more explanantions for Gbox: It is also an animation problem. Specifically, the proximity fuze and the explosive device is simply modeled as 'enter fuze range - take damage' ... there is no physical modeling of the shrapnel flying around etc, which is why you see the aircraft fragmenting the instant the missile is close enough to fuze.

Missiles in FC have proxy trigger (just like GGT explained) that makes you explode as soon as you're within trigger range. Missile explodes few miliseconds later so your screenie is one helluva catch!
