Autopilot hijacks my controls after being switched off

I should first say that I am a near utter newb (except for my LOMAC days), so there could be something I'm missing here.

Here's the issue:

I am learning how to use autopilot, and often after I turn it off (either through toggling or the designated key) and the green lights on the panel go away, I start losing control of the plane.

Often, but not always, the plane begins forcibly rolling in one direction or the other, requiring constant, heavy opposite pressure on the ailerons to keep from flipping over and going into the ground. It needs all my trim to get the plane back to its pre-autopilot behavior, and is akin to the effect of firing a heavy Kh-29 from one wing only.

At other times, the post-autopilot hijacking involves me not being able to dive at all. My nose will only point up and up, requiring me to lower the throttle in order to descend.

What the heck is going on? No green lights mean that the autopilot if off, right?
