At mission start I generally adjust my FOV using the / and * keys on the keypad but this can sometimes create a horrible fisheye effect.

Is there anyway to just move the camera to further back rather than zoom in or out?

If you're flying a 6 DoF cockpit, you can use the key-command RCTRL + RSHIFT + / (Or RCTRL + RSHIFT + - ). At least something like that. I don't recall the exact keycommand.

Have you tried changing the correct line in config/views/snapviewsdefault.lua? That usually works for me.
