My apologies, key bind got swapped on my end with "missile unlock" and "missile record". -

Today was my first day trying the "EE". I'm have the exact issue as above. Sidewinders, 530/550s; I can get a lock and nothing will happen. In dogfight mode I get the Aim9 growl and press to launch key and the piper does the gun piper does the 300/600 swap.
