Through negligent engine management, I let my coolant temp spike which seized my engine and forced me to land in a field. I waited over 20 minutes. The oil temp came down nicely but the coolant temp stayed off the scale.

I admit that's an interesting question, because in normal operational conditions it's the other way around (oil stays hot quite a bit longer then water). Does it matter, though? Low temps or not, If Your engine went bust, I think you wouldn't be able to start it up again anyway.

well, if you blew a head gasket and all the coolant leaked out, the thermometer is not going to have any coolant around it, and if it is located in the engine block, residual heat fom the engine will keep it hot.

Some time ago people complained about oil temperature going in critical state while just staying one ground at idle which prevents players from doing real checklists where you need to test engine for some minutes. AFAIK it was a bug but dunno if they fixed it correctly.
