What exactly does the Angle of Intercept knob do? I noticed its got pre-selections for 12.7mm and a few others

what are they used for and why?

The angle of intercept knob displaces the pipper downwards to account for the ballistics of the chosen weapon.

When the sight is in automatic mode the setting is chosen automatically. In manual mode, setting it to the preset for the weapon seems to be enough (e.g. when you're using the guns set it to the GSh-23L preset).

As written above, it's used for pipper angle control when:

a) using guns and unguided rockets if range finding by radar doesn't work or slant range unit is inoperable;

b) bombing.

The "12.7" marking on the knob is meant for a pod with A-12.7 machine gun, which was not employed on the Bis, but training variants used it. Other markings are self-explanatory.

Keep in mind that ASP in DCS MiG is somewhat simplified and still tuned by devs, so the knob is not very useful for us at the moment.
