Hello there :)

 

is the amount of pressure that initiates the deactivation of autopilot and the restoration of the aircraft's normal controls at all changeable ingame via the pilot's interface?

 

Not meaning some weird file tweak or anything, but I've a pretty sensitive stick so I accidentally override autopilot quite alot with my T-16000M. Is there any way to change the amount of pressure that would cause the autopilot to disengage, or is this a hard-set setting in the real aircraft as well?

It's based on degrees of pitch or roll. Not designed to be editable. Not sure if you could do it via lua edits.

As far as I know, you can't edit it through the systems directly on the A10

Instead, you might want to consider adding some deadzone or curvature in the axis settings. With a sensitive stick, it does make other stuff easier too.
