When I go to fly the Huey there's a red box at the upper left. On the right side there's a large orange circle and below that a bunch of words. How do I get rid of all that?

You mean the control indicator ? It doesn't exactly fit your description but that's the only thing I can think of. It's Rctrl+Enter

Agreed, not sure what you mean either. Other possibilities are the two windows for AI states and the ammo cheat sheet. These can be toggled on and off with various combinations of alt, shift, ctrl and I think win + the h key. They can be defaulted to off in the options -> misc -> UH-1 panel. Just uncheck the various helper boxes, should be self explanatory. None of these fit your description though.

The "orange circle" sounds to me like the radar from "game mode".
