sorry for the beginner question.....is there ani way to change fuel load in dcs aircraft like f15, su27, mirage and so on?

Yes, of course.

You can change the amount of fuel in the mission editor (click on the plane, then on the right side in the armament menu), and also in the rearming/refueling menu when the aircraft is off and you are on the ground on a friendly airfield.

You can also use Left "ALT" and " ' " to bring up an armament / fuel window while sitting in the cockpit. You can refuel and Rearm the A-10C with engines running. F-15C engines must be shut down. Not sure of others.
