Profiles for Cougar HOTAS (stick and throttle)

I've been reading around but I'm not quite at the level of understanding I'd like to be.

 

I'm currently waiting for my ViperGear sensor for my throttle, but I'm trying to figure out how to work profiles with either Foxy or TARGET or DCS.

 

Essentially, since I've never done this before, I don't know what controls I want mapped to the throttle/stick, so I want to start with a profile and modify it from there.

 

Problem is, getting profiles to work seems a little byzantine.

 

Where is a good place to start (for instance, a Mirage 2000C profile since I like to fly that a lot)?

There is also a Target profile made by @HomeFries, but I found it too complex, so I chose instead to make my own on Foxy :)

Beautiful - I even have the F-18, so I can practice with it.
