Even though my entire system is running on a HDD, can I uninstall DCS from it and re-install DCS on a new SSD? Or does the SSD need an OS (Windows) which would force me to do a dual boot config?

Yes, you can just uninstall it from the original drive and install it to the new one, the other drive does not need an OS installed if you already have an OS installed on the first hard drive.

No need to reinstall DCS if you will keep the same Windows .. just copy the DCS Program File folder from the current drive onto the new one (unless you use the Steam version of DCS) and edit the desktop shortcut that you use to start the Sim.

 

You may also want to move the Saved Games folder, over to the new drive ... move it with this procedure:
